Hayden Cleghorn’s dream of travelling the world, cooking his way through kitchens in as many countries as possible, is one step closer since finishing his training at Tai Poutini Polytechnic (TPP).

“I was lucky to win the West Coast Trades Academy scholarship to train at TPP in 2019, and what I learned has helped me get a promotion at work and get me ready for the future.”

Hayden completed TPP’s Certificate in Cookery Level 4 at the end of 2019 and is moving up the ranks in his job in the kitchen at Buccleugh’s on High and the Recreation Hotel.

“I’ve always enjoyed cooking and trying new things with food. The training at TPP was great; it really helped me get a good understanding of how a busy kitchen works and how to prepare food. I knew what I needed to do and I was able to move up from a kitchen hand to a commis chef,” he says.

“I pretty much enjoyed everything I learned at TPP and the practical work was great. I liked preparing food for staff and tutors and the canapés we made for the opening of the TPP Jade Exhibition at the end of the year were a real challenge.”

Recreation Hotel Owner Annalisa Parkinson says Hayden has a great understanding of the food industry from his training at TPP.

“The skills and level of graduates we’ve previously employed from TPP have been to up to our standards, and they have all fitted in to our team smoothly. Kitchens on the West Coast are always looking for experienced staff and TPP tutors are very good at sending skilled students in our direction,” she says.

“Hayden has moved up from a kitchen hand and has flexibility in his job role, working with all sorts of foods and filling in when needed at our Sushi Bar in Greymouth. We look forward to seeing Hayden continue to grow as a chef with us and we look forward to continuing these opportunities.”
