I did my chef training at TPP back in the 1990s. It was a great place to start. Tutor Alex Hayward stressed the importance of good basic skills and techniques. What I learned there sparked my passion for a culinary career.
Good chefs are always in demand and I’ve worked all over the world. But there aren’t many places to compare to the West Coast and the pull of home was strong. I’m now executive chef at the historic Theatre Royal Hotel, Kumara. We focus on using fresh local produce and delivering a fine dining experience for guests. I love this little patch of paradise.
